Packaging Commitment

Disposable service ware is a major contributor to the waste produced in foodservice. With a focus on sustainability, all packaging in the café and markets will offer single-use sustainable cups, cutlery, napkins, and food packaging through a tree-free and plant-to-plastic technology.

Farmshelf

Our very own year-round indoor hydroponic “smart garden”. Farmshelf eliminates food waste and plastic packaging; you are growing and harvesting just what you need and using the produce where you are. While most fresh food is shipped across the country (in the US food travels an average of 1,500 miles), Farmshelf reduces the distance traveled from miles to feet. Farmshelf is a closedloop hydroponic system that uses 90% less water than conventional farming.

Food Waste

Our kitchen uses WasteNot, a proprietary tool that helps measure and analyze “Food Waste”. WasteNot guides chefs on best-in-class practices to reduce waste . Blue Earth Compost pickups our food scraps daily and turns it to soil.

A Connecticut owned business which picks up our “waste not” scraps and turns it into soil. On average we compost around 800 pounds of waste per month. Mitigating co2 emissions equivalent to 456 pounds of carbon dioxide.

Local Vendor Partnerships

Having local partners is important to us. We are happy to share that in our cafe and markets, we will be featuring local partners such as; Pat Lafrieda, Deep River Chips, Polar Seltzer, Liuzzi Cheese, Arethusa Farms Ice Cream. Our partner farms during harvest seasons are; Deercrest Farm in Glastonbury, CT: The Farm in Woodbury, CT: Arethusa Farms in Bantam, CT: Lyman Orchards in Middlefield, CT.
